Ground Beef Mixture
· 1 lb lean ground beef
· 1 tsp chili powder
· 1 tsp garlic powder
· 1/2 tsp onion powder
· 1 tsp paprika
· 1 tsp cumin
· 1/2 tsp salt
· 1/2 tsp cayenne pepper
· 1 small red bell pepper
· 1 small green bell pepper
· 2 tbsp tomato paste
· 1/4 cup red or yellow onion
· 1/4-1/2 cup water
Avocado Dip
· 1 smashed avocado
· 1 tbsp Greek yogurt
· 1 garlic clove
· 1/2 jalapeño
· 1/4 cup cilantro
· Salt and pepper, to taste
· 1 tbsp onion
Corn Fried Rice
· Long grain rice
· Onion
· Cilantro
· 1/2 can corn
· Fried onion pieces
· 2 garlic cloves
Bowl Toppings
· Black beans
· Corn
· Tomatoes, diced
· Shredded cheese
INSTRUCTIONS
Rice
Cook the rice according to package directions.
In a skillet, sauté onion and garlic until fragrant.
Add corn and fried onion pieces and cook briefly.
Stir in the cooked rice and cilantro. Mix well and heat through.
Ground Beef Mixture
Heat a large skillet over medium-high heat and cook the ground beef until browned. Drain excess grease if needed.
Add chili powder, garlic powder, onion powder, paprika, cumin, salt, and cayenne pepper.
Stir in tomato paste, onions, bell peppers, and water.
Simmer on low for about 6-8 minutes until thickened and flavorful.
Avocado Dip
In a bowl, combine smashed avocado, Greek yogurt, garlic, jalapeño, cilantro, onion, salt, and pepper.
Mix until smooth and creamy.
Assemble the Bowls
Start with a scoop of the confried rice.
Top with the ground beef mixture, black beans, corn, diced tomatoes, and shredded cheese.
Finish with a generous spoonful of avocado dip on top.
