One Pot Hamburger Helper

· 2 tbsp butter
· 1 lb lean ground beef
· 1 medium yellow onion, chopped
· Salt and black pepper, to taste
· 1 tsp chili powder
· 1 tsp paprika
· 1 tsp garlic powder
· 1 lb short cut pasta
· 1 zucchini, grated (optional)
· 2 cups low sodium beef broth
· 1 1/2 cups milk
· 1 1/2-2 cups shredded cheddar cheese
· 1 tbsp ketchup
· Fresh parsley, for serving
INSTRUCTIONS
In a large pot set over medium-high heat, melt the butter. Add the onion and ground beef.
Season with salt and pepper. Cook until the beef is browned, breaking it up as it cooks, about 10 minutes.
Stir in the chili powder, paprika, and garlic powder. Cook for another minute.
Add the pasta and optional grated zucchini. Toss to coat.
Pour in the beef broth and milk. Add the ketchup and stir to combine. Season with additional salt if needed.
Bring to a gentle boil over medium-high heat.
Simmer for 5-8 minutes, stirring often, until the pasta is al dente.
Stir in the shredded cheddar cheese and cook for another few minutes until creamy.
Divide into bowls and top with fresh parsley before serving.
